I’m planning to make this cute little apple pie cups for tea this weekend. Got the recipe from a friend of mine and it sounded easy. Try this for yourself :-
Preparation time: 20 minutes
Baking time: 20 minutes
Serves 4-6
Here’s the recipe:
1) 3 large apples (roughly 300g)
2) 1tbsp lemon juice (optional use only if apples are of a sweet variety)
3) 3-4 tbsp sugar
4) 2tsp plain flour
5) 1/4-1/2 tsp ground cinnamon
6) 2 tbsp golden raisins (optional)
7) Sheets of ready-rolled puff or short-crust pastry
8 ) 1 egg, beaten
9) 4-5 small heatproof bowls or cups
10) Vanilla ice-cream to serve
Directions:
- Peel and core apples. Cut into 1cm cubes and place in a mixing bowl
- Combine sugar and flour (amount of sugar will depend on whether the apples are sweet or sour)
- Mix sugar/flour mixture, ground cinnamon and rainsins (if used) into the apples
- Spoon apples into heatproof cups. Brush the edges of each cup with a little egg.
- Cut pastry into squares or circles 1cm larger than the top of the cup/bowl and position pastry to make a tight lid
- If desired, decorate the pastry with pastry leaves. Brush pastry all over with beaten egg and bake 180 degrees for 15-20minutes or until pastry is golden brown.
- Serve hot, accompanied with ice cream.
